Ingredients
400 g sugar
200 ml water
125 g butter
250 g tea biscuits (Pettit buere)
100 g walnuts or hazelnuts
50 g chocolate
1 small wafer sheet (optional)
Glaze
50 g melted chocolate

Instructions
- Ground nuts and tea biscuits. Place water and sugar in a saucepan and boil until the temperature reaches 220F. Remove from stove and add the cubed butter into sugar syrup and stir until it melts.
- Combine crushed biscuits with nuts. Make a little well in the middle and pour in the butter syrup. Mix with a spoon until you get a smooth mixture.
- Divide the mixture into equal parts. Use the scale for precision.
- Put 50 g of chocolate into one part and mix until it melts.
- Prep a wafer sheet or use a small pan 11” by 8”. Place the chocolate part on a wafer sheet and spread it evenly with a spatula.
- Add the light part over the chocolate part and spread with a spatula. Tip #1 If your light part is harder than chocolate, it is because it stands longer. So, the quick fix is to add a small tsp of hot water and mix it well.
- Place Bajadera in the fridge for 1/2 hours.
- Melt the chocolate over a double boiler. Pour the chocolate over the Bajadera and spread with a spatula. Pop it back in the fridge for at least 1 hour
- Cut Bajadera in half, then each half into three pieces, and then into small-sized pieces. Tip #2 Use a serrated knife, known as a bread knife for the best and most precise results.
- Tip #3 You can freeze Bajadere for up to 3 months.
