Ingredients:
250 ml warm milk
15 g yeast
100 g sugar
1 egg
100 ml oil
1 tsp rum
500 g all-purpose flour
1 tsp salt

- Grease a large bowl with oil and set aside. In the mixing bowl, add warm milk, sugar and yeast and let sit until frothy, about 5 minutes. Add oil, egg, and rum. Mix just to combine then add flour and salt.
- Mix for 4 minutes, then leave dough to rest for 5 minutes, then again mix dough for another 4 minutes. Transfer to a lightly floured surface and knead to form a ball.
- Place dough in an oiled bowl and cover with a clean dish towel. Let dough rise until doubled in size, about 1 hour.
- Sprinkle a large baking pan with flour. Turn dough onto a lightly floured work surface and roll out into a ½” thick rectangle. Using a doughnut cutter or 3” and 1” biscuit cutters, punch out your doughnuts. Re-knead scraps together and leave to proof for 10 minutes. Place doughnuts and holes onto baking sheets, cover with a dish towel, and let rise again, about 40 minutes more.
- Line a large baking pan with paper towels. In a large deep pan over medium heat, heat 2” oil to 375°f. Cook doughnuts, in batches, until deeply golden on both sides, about 1 minute per side. Holes will cook even faster!
- Transfer doughnuts to a paper towel-lined baking pan to drain and cool slightly. Dip into a glaze or simply sprinkle with icing sugar and cinnamon, then place onto a cooling rack (or eat immediately!).
