Sponge
100 ml warm milk
10 g yeast
90 g all-purpose flour
5 medium eggs
350 g all-purpose flour
25 g sugar
9 g salt
315 g butter (room temperature)
Filling
250 g feta cheese
1 egg
50 g soft butter
2 tbsp sour cream
1 tbsp milk

Warm up milk to lukewarm. Dissolve the yeast, add flour and mix to make a sponge. Let rise until it double
Using a paddle attachment, gradually mix the eggs and add flour, sugar, and salt. Make a soft dough.
Beat in the butter a little at a time until it is completely absorbed and the dough is smooth. The dough will be very soft and sticky.
Leave to rise for at least one hour or until it doubles.
At this point, you can leave the dough in the fridge overnight. Also, you can leave the dough in the fridge for one hour to reduce stickiness.
Roll out the dough into a rectangle 22 by 14 inches.
Spread the filling evenly over the dough with a pallet knife.
Roll up tightly from the bottom edge into a cylinder.
Cut into 20 slices around 1 inch (2.5 cm) thick.
Place in a big loaf pan 15” by 4” by 4” or two small loaf pans.
Cover and proof for 40-60 minutes or until double in size.
Egg wash after proofing and sprinkle with sesame seeds.
Bake at 375 F for 30 minutes, or until golden brown.
Cool down for at least 10 minutes in a pan, then transfer to a wire rack and continue cooling.
Pull up brioche piesces and enjoy.
