Plum Cake: A Sweet Tradition

One 9” round pan (23 cm)

Cake 

100 g soft butter

100 g brown sugar 

½ tsp cinnamon 

3 g salt

2 eggs at room temperature

180 ml milk at room temperature

200 g all-purpose flour 

500 g Italian-style plums, halved and pitted 

Streusel 

60 g butter

30 g sugar

30 g brown sugar

Pinch of salt

½ tsp of cinnamon

125 g flour

To make a streusel, rub all ingredients together until the fat is thoroughly blended in and the mixture appears crumbly.  

Mix butter, sugar and salt in the bowl of a mixer. Cream the ingredients together until light.

Add eggs in two stages and cream well.

Add milk and mix in.

Add flour and mix to a smooth dough.

Spread the dough in a greased and floured pan. Arrange plum halves, cut side up, on the top of the dough.

Top the cake with streusel. 

Bake at 400 F (200C) for 35 minutes. 

Leave to cool at room temperature for one hour.
