Apple pinwheels are a delightful treat that combines the flaky goodness of puff pastry with a luscious cream cheese filling, creating a perfect balance of flavours and textures. Each pinwheel is crafted with care, featuring layers of buttery pastry that puff up beautifully in the oven, resulting in a golden-brown exterior that is both crispy and tender. The star of the show, is the sweet and tangy apple filling, infused with warm spices like cinnamon and nutmeg, evoking the comforting essence of a homemade apple pie.

400 g Puff Pastry
1 egg
Apple filling
6 medium apples
50 g butter
Sugar
Cheese filling
Cheese
Sugar
1 egg
Lemon zest
Vanilla
Apricot glaze
50 g apricot jam
20 ml water
Wash, peel and cut apples. Saute apples with butter and sugar until the apples are tender.
Mix cream cheese with sugar, egg, and lemon zest.
Roll out into a rectangle about ⅛ inch (3 mm) thick and 8 by 12 (20-30 cm). Cut into 6 squares.
Make a cut about 1 ½ inches long from the corner of each square toward the centre.
Brush each square with egg wash. Fold corner flaps toward the centre to make a pinwheel.
Egg wash again. Deposit 2 tsp of cream cheese at the centre of each pinwheel. Top cream chees with 2-3 tbsp apple filling.
Bake at 350 F for 20-25 minutes.

While pinwheels are baking make apricot glaze. Combine jam and water in a small saucepan. Stir and cook until all is well mixed. Simmer until thickened. Pass through a fine sieve
After baking cool pastries for 5 minutes and brush with apricot glaze.
