Ingredients:
450 g pastry phyllo
70 g oil
70 g melted butter
1 kg peeled, ground apple
500 g grated walnuts
150 g sugar
150 g raisins
1 lemon zest
10 g (1tbsp) cinnamon
5 g (1 tsp) nutmeg
Simple syrup:
750 g sugar
750 ml water
½ lemon slice
Combine the syrup ingredients and bring to a boil. Simmer for 10 minutes, then cool to room temperature.
Preheat the oven to 400 F.
Butter the pan 13×9 in.
Unfold the phyllo leaves. Cut in half vertically. Lay 2 of the phyllo sheets in the bottom of the pan. Brush the dough with butter and oil mixture
Repeat until there are 8 sheets in the pan. Place one-third of the walnuts in the pan in an even layer, add one-third of the apple, one-third of the sugar, and one-third of the raisins, cinnamon and nutmeg.
Repeat two more times.
Finally, lay each of the remaining leaves in the pan, buttering each including the top one.
Cut the pastry vertically into six rows. then cut the squares diagonally to make diamond shapes.
Bake at 400F for 40-50 minutes until golden brown.
When the baklava is baked pour the warm syrup carefully over the hot baklava.
Let the baklava stand overnight so the syrup can be absorbed.
