Each cupcake is adorned with a whole strawberry perched on top, artfully designed to resemble a festive Santa hat. Yellow cupcakes:
3 egg whites
100 g sugar
Pinch of salt
3 egg yolks
50 ml oil
50 ml milk
150 g all-purpose flour
5 g baking powder
Filling:
2 tbsp of jam
4-5 medium strawberries cut into small cubes
12 medium whole strawberries for garnish
Icing:
80 ml whipped cream
250 g cream cheese
70 g icing sugar
1 tsp vanilla
Decoration:
White snowflake sprinkles
- Preheat the oven to 375 F/180 C. Place a red paper baking cup in 12 regular-size muffin cups.
- In a mixing bowl, whisk egg whites, salt, and sugar until soft peaks form. Add egg yolks and mix until combined. Next, slowly pour in oil and milk and mix just until incorporated.
Add flour and baking powder. Mix lightly with the spatula until the flour has been combined.
Divide batter evenly among muffin cups, filling each about ⅔ full.
Bake for 12-15 minutes or until a toothpick inserted in the center comes out clean. Cool in a pan for 5 minutes. Remove cupcakes from pans and place on a cooling rack to cool.
Wash, dry and clean from the stem. Reserve 12 good medium strawberries. Cut the rest of the strawberries into small pieces.
Mix fresh strawberries (that you cut into small pieces) with jam. Add the mixture into a piping bag and cut the top of it.
Gently core the center of each cupcake and fill it with strawberry filling.
In a mixing bowl mix whipped cream into soft peaks. In another bowl beat cream cheese and confectioners sugar until light and fluffy. Add whipped cream, and vanilla and mix on low speed until combined. Use medium star tip # 823 and
fill the decorating bag with cream cheese icing. Pipe icing onto cupcakes. Place one medium strawberry on each cupcake. Add a small dot of frosting to the tip of the strawberry.
Top the sides of the cupcake frosting with white snowflake sprinkles.
