Each cookie is generously filled with luscious jam, providing a burst of sweetness that perfectly complements the lightness of the dough. Made with simple ingredients like flour, oil, beer, and baking powder, our Vegan Beer Cookies are easy to whip up, allowing you to enjoy homemade goodness without the fuss. Ingredients
700 g all-purpose flour
1 vanilla sugar or 1 tsp vanilla
10 g baking powder
400 ml oil
230 ml beer
Jam for the filling

Instructions
- Prepare all ingredients. In a bigger bowl add all the ingredients and mix them just until the mixture gets compact and smooth.
- Cover with plastic wrap and leave to rest for 1 hour.

- Take ⅓ of the dough and roll it out into a rectangle. No need to flour the surface. The dough is smooth so it will be easy to work with it.
- Cut the rectangle into 12 pieces.

- Add ½ tsp of your favourite jam on each piece. ( I am using my favourite blackberry jam).
- Roll up each piece but make sure you tuck in the jam. Place it on a pan covered with the parchment paper.
- Do the same with the second third of the dough.
- The last piece of the dough, roll out into a circle and cut into 12 pieces. That way you will not have any leftover dough.
- Fill with the jam, tuck in the jam with the corners of the triangle and roll out.

- Bake at 390 F for 13-15 minutes. The cookies will get a light golden colour.
- Dust with icing sugar while still hot and leave to cool down completely.
