(Soft, fluffy, and beautifully decorated — perfect for holidays, gatherings, or Sunday family lunch)
This milk bread is soft, buttery, and slightly sweet — a true comfort food. But what makes it truly special is the decorative “dead dough” topping that turns this loaf into an edible work of art.
Dead dough is a simple, non-leavened dough that doesn’t rise, making it perfect for creating intricate flowers, leaves, and festive motifs that bake beautifully on top of bread.
Whether you’re making it for a holiday centerpiece, a gift loaf, or just to challenge your creativity in the kitchen, this recipe brings together both taste and art in one loaf.

🥣 Ingredients
For the Milk Bread
- 250 ml warm milk
- 15 g yeast
- 50 g sugar
- 1 egg
- 75 g butter, room temperature
- 500 g bread flour
- 10 g salt
For the Dead Dough (Decoration)
- 75 g flour
- 30 g cornstarch
- 75 ml cold water
- 2 tsp salt
👩🍳 Instructions
1. Prepare the Milk Bread Dough
- In a bowl, combine warm milk, yeast, and sugar. Cover and let it foam for 5 minutes.
- Add the egg, room-temperature butter, and flour mixed with salt.
- Knead in a stand mixer for 4 minutes, rest for 3 minutes, then knead again for 4 minutes.
- Transfer to an oiled bowl, cover, and let rise for 60–90 minutes, or until doubled in size.
The Poke Test – Give that ball of dough a firm poke with your finger. If the indentation fills back quickly, you’re good to go. If it stays looking like a deep dimple, continue kneading.
2. Make the Dead Dough (Decoration Dough)
Dead dough is dough that does not contain any leavening agents, such as yeast or baking soda. The dough will not rise, and whatever shape or thickness it is cut to, it will bake. This makes it a really useful tool for creating decorative and ornamental pieces, whether you want to make a gingerbread house or a topper for a cake and make it edible.
- In a small bowl, combine flour, cornstarch, salt, and cold water.
- Knead by hand or mixer until smooth.
- Place in a zip bag and rest for 10 minutes. Knead again for 5 minutes, then rest another 30 minutes.
- Press pieces of dough into silicone molds (flowers, leaves, etc.) and unmold onto parchment paper.
💡 Dead dough doesn’t contain yeast, so it holds its shape perfectly during baking.

3. Shape the Bread
- Divide the main dough into 4 pieces. Shape each into a ball and rest for 10 minutes.
- Set one piece aside. Roll the other three into 75–80 cm long strands.
- Braid them together and form into a circle in a 9-inch round pan.
- Press the last dough ball in the center. Let rise for 40–60 minutes.
4. Decorate & Bake
- Preheat oven to 400°F (200°C).
- Brush the risen bread with egg wash.
- Arrange the dead dough decorations: one large flower in the center, leaves on both sides, and balance the design symmetrically.
- Bake for 30 minutes.
- Remove from pan and cool completely.
