Ingredients (12 large muffins)

Dry

  • 300 g spelt flour
  • 25 g unsweetened cocoa powder
  • ¼ tsp salt
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • ¼ tsp ground nutmeg

Wet

  • 2 large eggs, room temperature
  • 200 g sugar
  • ½ cup kefir
  • ½ cup milk
  • ¼ cup olive oil

Add-ins

  • 2 medium apples, peeled and grated or finely chopped
  • ¼ cup chopped walnuts

Instructions

  1. Preheat oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners.
  2. In a large bowl, whisk together all dry ingredients.
  3. In a separate bowl, whisk eggs and sugar until combined. Add kefir, milk, and olive oil.
  4. Pour wet ingredients into dry and mix gently just until combined. Do not overmix.
  5. Fold in apples and walnuts.
  6. Divide batter evenly between muffin cups.
  7. Bake 15–18 minutes, until a toothpick comes out clean or with moist crumbs.
  8. Cool 5 minutes, then transfer to a rack.

Best served warm with coffee or tea.
