  • 2–3 tbsp ajvar (mild or spicy)
  • 2 tbsp olive oil
  • 60–80 g feta cheese or sirene, crumbled
  • 1 small cucumber, finely diced
  • ½ cup cherry tomato 
  • 1 cooked and peeled egg
  • 1 tbsp chopped fresh dill or parsley (optional)
  • Salt, to taste
  • Black pepper or smoked paprika (optional)

To serve:

  • Spelt pita bread (homemade or store-bought)

Instructions

  1. Spoon the yogurt into a shallow bowl and spread it gently with the back of a spoon.
  2. Add the diced cucumber evenly over the yogurt.
  3. Add a cherry tomato.
  4. Crumble feta cheese on top.
  5. Spoon ajvar in small dollops or swirl it gently into the yogurt.
  6. Drizzle generously with olive oil.
  7. Add egg, cut in forth 
  8. Finish with herbs, black pepper, or smoked paprika.
