  • 100 ml oil
  • 150 ml Balkan yogurt

  • 2 eggs
  • 1 cup chopped spinach (fresh or frozen, well-drained)
  • 1 tsp baking powder

👩‍🍳 HOW TO MAKE BALKAN MINI PIES

1. Prepare the Dressing

In a bowl, whisk the eggs with salt. Add oil, yogurt, and milk. Mix until smooth and fully combined. Set aside.

2. Make the Filling

In a separate bowl, combine feta cheese and eggs. Add spinach and baking powder. Mix gently, just until combined.

3. Prepare the Pan

Preheat oven to 400°F (200°C).
Line a 10 × 10-inch baking dish with parchment paper.


4. Assemble the Mini Pies

  1. Place one phyllo sheet on the counter, long side facing you, and brush lightly with melted butter.

👩‍🍳 PRIPREMA

1. Priprema preliva

U činiji umutiti jaja sa malo soli. Dodati ulje, jogurt i mleko, pa sve dobro sjediniti dok se ne dobije gladak preliv. Ostaviti sa strane.


2. Priprema fila

U drugoj činiji pomešati sir i jaja. Dodati spanać i prašak za pecivo. Lagano izmešati, samo dok se sastojci ne povežu.


3. Priprema pleha

Uključiti rernu da se greje na 200°C.
Plehu dimenzija 25 × 25 cm (10 × 10 inča) obložiti papirom za pečenje.


4. Formiranje mini pita

  1. Prvu koru staviti na radnu površinu, dužom stranom okrenutom ka sebi, i lagano premazati otopljenim puterom.
  2. Preko staviti drugu koru, pa po celoj površini rasporediti 2–3 kašike preliva i blago premazati.
  3. Po sredini kore rasporediti 3–4 kašike fila, skoro do ivica, ali ostaviti oko 5 cm prazno na kraju.
  4. Preklopiti jednu bočnu stranu preko fila, zatim drugu, tako da fil bude zatvoren.
  5. Lagano premazati odozgo sa malo preliva i uviti u rolnu, ne previše čvrsto.
  6. Pitu pažljivo preneti u pleh.

Ponoviti postupak sa preostalim korama.


5. Pečenje

Mini pite obilno premazati ostatkom preliva i po želji posuti susamom.

Peći 35–40 minuta, dok ne dobiju lepu zlatno-braon boju.

Ostaviti da odstoje 5 minuta, pa poslužiti tople.
