Ingredients

Dough

350 ml warm milk
10 g active dry yeast
50 g granulated sugar
50 g unsalted butter, melted
250 g all-purpose flour
200 g bread flour
10 g salt

1 egg, for brushing
sesame seeds for topping

Filling

200 g feta cheese
1 egg
1 tbsp sour cream
1 tbsp chopped parsley


Instructions

Activate the Yeast

In a mixing bowl, whisk together warm milk, yeast, and a pinch of sugar.
Let it sit for about 5 minutes until the yeast becomes foamy.

Make the Dough

Add melted butter, sugar, flour, and salt.

Mix with a stand mixer using a dough hook on medium speed for about 5 minutes.

The dough should feel soft, slightly sticky and tacky, but it should not stick heavily to your fingers.

Let the dough rest for 2 minutes, then mix again for another 2–3 minutes.

First Rise

Transfer the dough to a lightly floured surface, then gently shape it into a ball.

Place the dough in a lightly oiled bowl, cover with plastic wrap or a kitchen towel, and let it rise in a warm place for about 1½ hours, or until doubled in size.

Prepare the Filling

In a small bowl, mix:

feta cheese,
egg,
sour cream,
chopped parsley.

Set aside.

Shape the Rolls

Turn the risen dough onto the work surface and roll it into a rectangle.

Cut the dough into 12 equal pieces.

Second Rise

Cover the pan loosely with plastic wrap and let the rolls rise 45–60 minutes, until puffed.

Bake

Bake in a 400°F (200°C) oven for 13–15 minutes, until golden brown.

Let them cool slightly before serving.

Storage

Store in an airtight container at room temperature for 2 days.

Sastojci

Testo

350 ml toplog mleka
10 g suvog kvasca
50 g šećera
50 g otopljenog maslaca
250 g glatkog brašna
200 g brašna za hleb
10 g soli

1 jaje za premazivanje
susam za posipanje

Fil

200 g feta sira
1 jaje
1 kašika pavlake
1 kašika seckanog peršuna


Priprema

Aktiviranje kvasca

U činiji pomešajte toplo mleko, kvasac i prstohvat šećera.

Ostavite oko 5 minuta dok kvasac ne zapeni.

Priprema testa

Dodajte otopljeni maslac, šećer, brašno i so.

Mutite mikserom sa kukom za testo oko 5 minuta na srednjoj brzini.

Testo treba da bude mekano i blago lepljivo, ali da se ne lepi mnogo za prste.

Ostavite testo da odmori 2 minuta, zatim ponovo mesite još 2–3 minuta.

Prvo narastanje

Testo prebacite na blago pobrašnjenu površinu i oblikujte kuglu.

Stavite u nauljenu činiju, pokrijte folijom ili krpom i ostavite da naraste oko 1½ sat, dok se ne udvostruči.

Priprema fila

U činiji pomešajte:

feta sir,  jaje, pavlaku, i seckani peršun.

Oblikovanje kiflica

Nadošlo testo razvucite u pravougaonik.

Isecite na 12 jednakih delova.

U svaki deo stavite oko 1 kašiku fila.

Spojite ivice i oblikujte loptice.

Poređajte ih u okrugli pleh od 30 cm obložen papirom za pečenje.

Drugo narastanje

Pokrijte i ostavite da naraste 45–60 minuta.

Pečenje

Premažite umućenim jajetom i pospite susamom.

Pecite u rerni zagrejanoj na 200°C oko 13–15 minuta dok ne porumene.

Ostavite da se malo prohlade pre serviranja.
