Combining Apples and Plums in Flaky Phyllo

Get ready to bake and create a delightful apple and plum strudel using light and crispy phyllo dough! This recipe will show you how to layer the dough and fill it with sweet, juicy fruit for an irresistible dessert.

 Ingredients  

1 pack of phyllo dough (450g)

Oil or melted butter  for brushing phyllo

200 g bread or cookie crumbs

2 kg peeled and grated granny smith apples 

1 kg plums

300 g sugar

200 g crushed walnuts

6 tsp cinnamon 

Preheat oven to 400 F.

Lay two sheets of filo and brush with oil or melted butter.

Sprinkle over bread or cookie crumbs over half a sheet of phyllo then add ⅙  apples and 8  halves of plum in a central line (lengthways). 

Sprinkle with some walnuts, 3 tbsp of sugar, and 1 tsp of cinnamon. 

Roll the strudel like a jelly roll. 

Transfer the strudel onto the oiled baking tray. 

Repeat 5 more times. 

Cut each strudel into 6 pieces, brush with apple juice that you got from grating apples and leave to stand for 5 minutes. Now brush with melted butter and bake for 35-40 minutes until golden and crisp.

Remove from oven and allow strudel to rest for 10-15 minutes before transferring to a serving plate. Sprinkle with sugar powder.

The tips and techniques are the same as Pear and Blackberry Strudel.

 Tip#1: Keep spare filo sheets under a damp tea towel while working to stop them from drying out and cracking.

Tip #2 Instead of cinnamon you can add some of your favourite spices, I love pumpkin spice and nutmeg but any of fall favourites will work.

Tip#3 Don’t skip cutting the strudels before baking, it helps steam to vent which will help the top of the phyllo stay crisp. 

Tip #4 Brushing phyllo with water helps hydrate phyllo.

Tip #5 Instead of plum you can use cherry.

Tip #6 My go-to way to serve apple strudel is with powdered sugar on top. Other ways to serve your strudel are with vanilla ice cream, vanilla sauce, caramel sauce, icing, whipped cream, or a glaze of your choice. It’s a versatile recipe that goes well with all sorts of toppings.

Tip #7 You can enjoy apple strudel as a warm or cold dessert. To serve warm, reheat the leftovers in the oven before serving.
