A Slice of Happiness: Moist Apple Cake Recipe

This apple cake is not just a dessert; it’s a celebration of flavors and textures. Ingredients

6 egg whites

250 g sugar

6 egg yolks

150 ml oil

150 ml milk

300 g all-purpose flour

10 g baking powder

1.5 kg apples (Granny Smith or McIntosh)

120 g sugar 

1 tsp cinnamon

  • Peel and grate apples into a large skillet. Add sugar and saute 
  • on medium-high heat until all juices disappear about 5-10 minutes. Turn off the heat, add cinnamon and cool down for 15 min.
  • Preheat the oven to 375 F/180 C. Grease a baking pan (9×13 inch) with oil or line with parchment paper. 
  • In a mixing bowl, whisk egg whites and sugar until soft peak. Add egg yolks and mix until combined.  Next, pour oil and milk slowly and mix just until incorporated.  

Add flour and baking powder. Mix lightly with the spatula until the flour has been combined. 

  • Pour 1/2 of the batter into the prepared baking pan and spread evenly across the bottom. Bake for 15 minutes until the top has turned a light brown color. Once the bottom cake layer has been baked, remove the cake from the oven and spread the apple filling on top (no need to wait for it to cool).
  • Pour the remaining batter on top of the apple filling and spread in an even layer.
  • Return to the oven and bake for 20-25 minutes until golden brown. 
  • Allow the cake to cool completely, cut into 3×6 squares, dust with powdered sugar, and serve.
