Lenja pita is one of those desserts for me—a simple Balkan apple dessert filled with cinnamon-scented apples and the comforting aroma of home.
For this recipe, I took those familiar flavors and turned them into a beautiful Lenja Pita Torta: four tender cake layers, cinnamon apples, creamy full-fat cream cheese filling, delicate cake crumbs, fresh apple slices and just a light drizzle of caramel.
It has all the flavors of classic lenja pita, but in a completely different presentation.
Perfect for autumn, family gatherings, Sunday coffee, or whenever you want a traditional Balkan dessert with a little something extra.
Ingredients
Cake
- 6 egg whites
- 250 g sugar
- 6 egg yolks
- 150 ml neutral oil
- 150 ml milk
- 300 g all-purpose flour
- 10 g baking powder
Cream Cheese Filling
- 450 g full-fat cream cheese, cold
- 250 ml heavy whipping cream, cold
- 100 g powdered sugar
- 1 teaspoon vanilla extract or 1 packet vanilla sugar
Apple Filling
- 1.5 kg apples, such as Granny Smith or McIntosh
- 120 g sugar
- 1 teaspoon cinnamon
For Decoration
- Fine cake crumbs
- Cream cheese rosettes
- A few very thin apple slices
- A small amount of caramel for drizzling
How to Make Lenja Pita Torta
1. Prepare the Apple Filling
Peel and grate the apples.
Place them in a large skillet together with the sugar. Cook over medium-high heat, stirring occasionally, until the apples release their juices and most of the liquid has evaporated, about 5–10 minutes.
Remove from the heat and stir in the cinnamon.
Transfer the apple mixture to a shallow dish and allow it to cool completely before assembling the cake.
2. Make the Cake
Preheat the oven to 375°F / 190°C.
Line the bottoms of two 8-inch (20 cm) round cake pans with parchment paper.
In a large mixing bowl, beat the egg whites with the sugar until soft peaks form.
Add the egg yolks and mix just until combined.
Slowly add the oil and milk, mixing only until incorporated.
Add the flour and baking powder. Gently fold with a spatula until the flour is incorporated. Do not overmix.
Divide the batter evenly between the two prepared pans and spread it evenly.
Bake for approximately 15–20 minutes, or until lightly golden and a toothpick inserted into the center comes out clean.
Allow the cakes to cool completely.
Once completely cool, carefully cut the top, then cut each cake horizontally in half to create four cake layers.
Make the crumbs:
- Cut the cake into chunks and place them in a food processor.
- Pulse until the crumbs reach a uniform size.
3. Make the Cream Cheese Filling
Mix whipping cream with 50 g of icing sugar until fluffy.
Beat the cold cream cheese with the powdered sugar until smooth.
Add the heavy cream.
Whip until you have a thick, spreadable cream that holds its shape.
Be careful not to over-whip.
4. Assemble the Cake
Place the first cake layer on your serving plate.
Spread a thin layer of cream cheese filling over the cake.
Add a layer of the cooled apple filling.
Repeat with the second cake layer, cream cheese and apples.
Repeat again with the third cake layer, cream cheese and apples.
Finish with the fourth cake layer.
Cover the top with the remaining cream cheese filling.
5. Decorate
Cover the sides of the cake with fine cake crumbs.
Pipe 8–10 cream cheese rosettes around the edge of the top.
Place a few very thin apple slices between the rosettes.
Finally, drizzle the cake with a very light amount of caramel.
The caramel should create delicate lines rather than a heavy layer of sauce.
Serving
Serve Lenja Pita Torta chilled or slightly cool.
It is especially beautiful with coffee or tea and makes a lovely autumn dessert for family gatherings, Sunday dinners and celebrations.
Storage
Store the cake covered in the refrigerator because of the cream cheese and heavy cream.
For the best texture and flavor, enjoy within 2–3 days.
The apple filling can be prepared ahead of time and refrigerated until you are ready to assemble the cake.
Variations & Substitutions
Apples
Granny Smith gives a pleasant tartness, while McIntosh creates a softer, sweeter filling. You can also use a combination of apples.
Cinnamon
For a warmer autumn flavor, add a small pinch of nutmeg or ground cloves.
Cream
Full-fat cream cheese gives the filling the best structure. Avoid low-fat cream cheese if you want firm, stable layers.
Caramel
The caramel is optional. A very small drizzle is enough because the cake already has plenty of flavor from the apples, cinnamon and cream cheese.

Postoje kolači koji su jednostavno ukusni, a postoje i oni koji nas jednim zalogajem vrate u detinjstvo.
Lenja pita je upravo takav kolač. Miris jabuka i cimeta je jedan od onih mirisa koji odmah podsećaju na domaću kuhinju i porodični sto.
Ovoga puta sam poznate ukuse lenje pite pretvorila u prelepu Lenja pita tortu – sa četiri mekana sloja kore, kuvanim jabukama sa cimetom, kremastim filom od punomasnog krem sira, mrvicama kore, svežim jabukama i vrlo malo karamela.
Svi poznati ukusi su tu, ali u potpuno drugačijem obliku.
Savršena je za jesen, porodična okupljanja, nedeljnu kafu ili kada želite tradicionalni balkanski kolač sa malo drugačijom prezentacijom.

Sastojci
Kora
- 6 belanaca
- 250 g šećera
- 6 žumanaca
- 150 ml ulja

- krem rozetice
- nekoliko veoma tankih kriški jabuke
- malo karamela za prelivanje
Priprema
1. Fil od jabuka
Oljuštite jabuke i izrendajte ih.
Stavite ih u veću šerpu ili tiganj, dodajte šećer i dinstajte na srednje jakoj do jačoj temperaturi dok jabuke ne puste sok i dok višak tečnosti ne ispari, oko 5–10 minuta.
Sklonite sa šporeta, dodajte cimet i promešajte.
Prebacite jabuke u pliću posudu i ostavite da se potpuno ohlade pre filovanja torte.
2. Kora
Zagrejte rernu na 190°C / 375°F.
Dva kalupa prečnika 20 cm (8 inča) obložite papirom za pečenje.
U većoj posudi umutite belanca sa šećerom dok ne dobijete mekane vrhove.
Dodajte žumanca i kratko umutite da se sjedine.
Polako dodajte ulje i mleko i mešajte samo dok se sve ne sjedini.
Dodajte brašno i prašak za pecivo.
Špatulom lagano umešajte brašno, samo dok se sve ne sjedini. Nemojte previše mešati.
Ravnomerno podelite smesu u dva pripremljena kalupa.
Pecite oko 15–20 minuta, odnosno dok kora ne dobije svetlo zlatnu boju i čačkalica zabodena u sredinu ne izađe čista.
Ostavite kore da se potpuno ohlade.
Kada su potpuno hladne, svaku koru pažljivo presecite vodoravno na pola.
Dobićete četiri sloja kore.
3. Krem
Umutite hladan krem sir sa šećerom u prahu dok ne postane gladak.
Dodajte hladnu slatku pavlaku i vanilu.
Mutite dok ne dobijete gust, maziv krem koji drži oblik.
Nemojte previše mutiti.
4. Slaganje torte
Na tanjir stavite prvi sloj kore.
Premažite tankim slojem krema od krem sira.
Preko stavite sloj ohlađenih jabuka.
Ponovite postupak:
kora → tanak sloj krema → jabuke
još dva puta.
Na kraju stavite četvrti sloj kore.
Premažite celu tortu preostalim kremom.
5. Dekoracija
Stranice torte obložite sitnim mrvicama kore.
Na vrhu istisnite 8–10 rozetica od krema uz ivicu torte.
Između rozetica stavite nekoliko veoma tankih kriški jabuke.
Na kraju tortu vrlo lagano prošarajte karamelom.
Karamel ne treba da bude težak preliv – dovoljno je samo nekoliko tankih linija.
Čuvanje
Tortu čuvajte pokrivenu u frižideru zbog krema od krem sira i slatke pavlake.
Najbolja je u prva 2–3 dana.
Fil od jabuka možete pripremiti unapred, potpuno ohladiti, pokriti i čuvati u frižideru do slaganja torte.
