Soft, golden, homemade Balkan-style doughnuts filled with pumpkin, plum or peach jam and finished with three different sweet coatings. These rich yeast doughnuts are tender on the inside, lightly crisp on the outside, and full of comforting homemade flavor.
What makes these doughnuts special is the combination of fruit fillings and matching coatings. Plum jam pairs beautifully with cinnamon sugar, peach jam gets a delicate finish of icing sugar and vanilla sugar, and pumpkin jam brings the warm flavor of pumpkin spice. You can choose your favorite or fill a doughnut with all three jams for a delicious surprise.

Instructions
1. Activate the yeast
In a large mixing bowl, combine the warm milk, active dry yeast and 1 tablespoon of sugar. Stir gently and let stand for about 5–10 minutes, until the mixture becomes foamy. The milk should be warm, not hot.
2. Make the dough
Add the remaining 50 g of sugar, vanilla sugar, salt, eggs, melted butter and 450 g of flour. Mix and knead for approximately 5 minutes, until the dough becomes smooth, elastic and soft.
If the dough is excessively sticky, gradually add more flour, a little at a time, up to the remaining 50 g. The dough should remain soft and slightly tacky. Avoid adding too much flour, as this can make the doughnuts heavy.
3. Let the dough rise
Cover the bowl and leave the dough in a warm, draft-free place until it nearly doubles in size. This usually takes about 1–1½ hours, depending on the room temperature.
4. Roll out the dough
Transfer the dough to a lightly floured work surface. Gently knead it for a minute or two, then let it rest for 10–15 minutes so it becomes easier to roll.
Roll the dough to approximately 1 cm thick.
5. Cut the doughnuts
Use a round cutter about 7 cm in diameter to cut out the doughnuts. Place them on a parchment-lined tray, leaving space between them. Gather the scraps gently, allow them to rest briefly, and cut out any remaining doughnuts.
6. Let the doughnuts rise again
Cover the doughnuts loosely and let them rise for another 20–30 minutes, or until visibly puffy and light. Avoid letting them dry out during this stage.
7. Fry the doughnuts
Heat the oil in a heavy-bottomed pot to 350°F (175°C). Carefully add a few doughnuts at a time, leaving enough room for them to expand.
Fry for approximately 2 minutes per side, adjusting the heat as necessary to maintain the oil temperature. The doughnuts should become evenly golden brown and cooked through. Cooking time will depend on their thickness and the oil temperature.
Transfer the fried doughnuts to a wire rack or a paper-towel-lined tray to drain briefly.
Safety tip: Never leave hot oil unattended. Lower the doughnuts carefully into the oil, and keep water away from the frying pot.
8. Coat the doughnuts
Prepare three separate coating mixtures.
- Plum: Mix granulated sugar with ground cinnamon. Coat the doughnuts while they are still warm.
- Peach: Mix icing sugar with vanilla sugar. Let the doughnuts cool slightly before dusting so the icing sugar does not melt immediately.
- Pumpkin: Mix granulated sugar with pumpkin spice. Coat the doughnuts while they are still warm.
9. Fill with jam
Transfer each jam into a separate piping bag fitted with a round filling tip. Make a small hole in the side of each doughnut and gently pipe in the desired filling.
Fill some doughnuts with plum jam, others with peach jam, and others with pumpkin jam. For a special treat, try combining all three jams in one doughnut.
Avoid overfilling, as too much jam can cause the doughnuts to split.
10. Serve
Serve the doughnuts fresh, when they are soft and fragrant. Enjoy them with coffee, tea or a glass of milk.
Tips for the best doughnuts
- Measure the flour carefully and add it gradually.
- Use thick, smooth jam that can pass through your piping tip.
- Maintain the oil temperature to prevent the doughnuts from browning too quickly.
- Match each jam with its own coating for a beautiful presentation.
- These doughnuts are best enjoyed fresh. Store leftovers in an airtight container at room temperature for a short period, and refrigerate if the fillings require it.
A little Balkan-inspired sweetness: One dough, three jams, and three different finishes. Which filling would you choose first — plum, peach or pumpkin?

Priprema
1. Aktiviranje kvasca
U većoj posudi pomešajte toplo mleko, suvi aktivni kvasac i jednu kašiku šećera.
2. Mešenje testa
Dodajte preostalih 50 g šećera, vanilin šećer, so, jaja, otopljeni puter i 450 g brašna. Mešajte i mesite oko 5–8 minuta, dok ne dobijete glatko, elastično i mekano testo.
5. Sečenje krofni
Okruglim kalupom prečnika oko 7 cm isecite krofne.
6. Drugo narastanje
Krofne lagano pokrijte i ostavite da narastaju još 20–30 minuta, odnosno dok ne postanu vidno vazdušaste i mekane. Pazite da se površina testa ne osuši.
8. Posipanje
Pripremite tri odvojene mešavine.
- Šljiva: Pomešajte kristal šećer i mleveni cimet. Uvaljajte krofne dok su još tople.
- Breskva: Pomešajte šećer u prahu i vanilin šećer.
- Pažljivo odmerite brašno i dodajte ga postepeno.
